2015 ‘Perfect Day’ Sauvignon Blanc + Semillon

The Karridale subregion is home to the finest Sauvignon Blanc grapes in Margaret River. Crisp higher natural acids; aromatic citrus fruit profiles; extended slower ripening and more fruit intensity: what’s not to like?

Semillon has always colluded with Savvy. Our choice of Karridale Semillon is due to its lemon pith midpalate and racy mineral acidity that complements and extends the punchy Sauvignon profile. Both varities utilize a VSP canopy configuration with the Sauvignon Blanc being cane pruned and the Semillon on spurs. Both varities are left with shaded fruit zones to prevent sunburn and preserve acidity and freshness.

The 2015 vintage saw low yields and historically early harvesting across all varieties. Another above average year for temperature accumulation continued its trend. Typically we harvest according to flavor and acid, so sugar levels tend to remain low.

Both parcels were machine picked and pressed. The Semillon was filled to older oak for 100% wild solids barrel ferment, the Sauvignon Blanc to both tank and barrel with light solids. All components were aged on their lees for 10 months with the light solids enhancing texture and complexity. Overall 63% of the blend was barrel fermented.

The 2015 Perfect Day has fantastic complex aromatics reflecting the punchy Sauvignon lavender and lantana, Semillon lemons, dries herbs and lees-driven roasted nuts. The palate is tight, refreshing and clean but has layered lime brulee texture and a long lean finish. Bone dry but fruit rich.
